Beef and Noodle Soup

Ingredients

  • 1/2 Bag of Mrs. Miller’s Wide Noodles
  • 4 Cups Beef Tips, cooked through
  • 1 Medium Yellow Onion, fine diced
  • 3 Carrots, peeled and halved lengthwise then sliced in half
  • 3 Stalks of Celery, chopped
  • 2 TBS Mrs. Miller’s Beef Flavored Soup Base
  • 6 Cups of Water
  • 2 tsp Unsalted Butter
  • 2 TBS Flat Leaf Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. Par boil Mrs. Miller’s Wide Noodles until just soft but not cooked through
  2. Prepare Mrs. Millers Beef Soup Base in 6 Cups of warm water, set aside
  3. In a large stock pot, melt the Unsalted Butter and add the onion with desired amount of salt and pepper. Cook 3-5 minutes or until Onion is translucent
  4. Add the Carrots and Celery and cook 3 more minutes. Pour the prepared Beef Broth into the pot and bring to a simmer
  5. Add prepared Beef to the pot and simmer for 15 minutes or until vegetables have softened
  6. Add Mrs. Miller’s Wide Noodles and bring to a boil until Noodles are cooked through
  7. Stir in the chopped parsley and serve hot
