Beef and Noodle Soup

- 1/2 Bag of Mrs. Miller’s Wide Noodles
- 4 Cups Beef Tips, cooked through
- 1 Medium Yellow Onion, fine diced
- 3 Carrots, peeled and halved lengthwise then sliced in half
- 3 Stalks of Celery, chopped
- 2 TBS Mrs. Miller’s Beef Flavored Soup Base
- 6 Cups of Water
- 2 tsp Unsalted Butter
- 2 TBS Flat Leaf Parsley, chopped
- Salt and Pepper to taste
Instructions
- Par boil Mrs. Miller’s Wide Noodles until just soft but not cooked through
- Prepare Mrs. Millers Beef Soup Base in 6 Cups of warm water, set aside
- In a large stock pot, melt the Unsalted Butter and add the onion with desired amount of salt and pepper. Cook 3-5 minutes or until Onion is translucent
- Add the Carrots and Celery and cook 3 more minutes. Pour the prepared Beef Broth into the pot and bring to a simmer
- Add prepared Beef to the pot and simmer for 15 minutes or until vegetables have softened
- Add Mrs. Miller’s Wide Noodles and bring to a boil until Noodles are cooked through
- Stir in the chopped parsley and serve hot
